Citrus Vinaigrette

INGREDIENTS: 
  • 2 Tbs. white wine vinegar
  • 2 Tbs. fresh lemon juice
  • 1 Tbs. Dijon mustard
  • 1 tsp. honey
  • Salt and pepper to taste
  • 6 Tbs. extra-virgin olive oil
  • 6 Tbs. canola oil
DIRECTIONS: 

Place vinegar, lemon juice, Dijon, honey, and a pinch of salt in a bowl. Combine oils in a separate bowl, and slowly add them to the first mixture. Whisk until emulsified. Add salt and pepper to taste.
