1 small cucumber or 1/2 English cucumber peeled, seeded, and cut into small dice
Kosher salt
1 medium tomato peeled, seeds removed, flesh cut in small dice
1 (17½ oz.) container plain full-fat Greek yogurt
1/4 cup sour cream
1 jalapeño, seeded and minced
1/2 cup finely chopped cilantro
1/2 cup finely chopped mint
Juice of ½ lemon
Popadams, (crispy Indian crackers) available at Whole Foods
Toss the cucumber with salt and put in a colander. Place the chopped tomato on top of the cucumber. Let drain for 20 minutes.
Combine all of the ingredients except the popadams in a bowl, making sure to taste and add salt accordingly. (You will need more than you think.) Serve with popadams.
