  • 2 Tbs. peanut oil
  • 3/4 cup cleaned and stemmed baby shiitake mushrooms
  • 3/4 cup edamame (green soybeans) frozen is fine
  • 1 Tbs. honey
  • 1 tsp. sambal oelek (Indonesian chile sauce)
  • 2 Tbs. cold unsalted butter cut into pieces
  • Salt and freshly ground white pepper


Heat the oil in a saucepan over medium-high heat. Sauté the shiitake mushrooms for about two to three minutes, or until golden brown. Reduce the heat to medium and add the edamame, hoisin sauce, honey and Sambal Oelek. Sauté for another minute, remove from heat, and finish by slowly stirring the butter in. Season to taste with salt and pepper and keep warm until serving.
