Any time that I’m not at work, I’m generally spending time with my family.”15 Minutes with Vinson PetrilloChef Vinson Petrillo says diners at new restaurant Costa will find similar flavors to those at Zero George:“We’ll be even a bit more bold with them.”A Shiny New Kitchen: “Costa has [equipment] that I’ve always wanted at Zero, like two induction burners and a walk-in freezer.”Setting the Hook: “My son’s favorite thing to do is fish. We never really catch anything, but it’s more about spending time together and being outside.”Back of House: “At work, I’m focusing on my team at the moment. I’m trying to provide them with a quality of life that I didn’t have growing up in kitchens.”Hitting the Highway: “I love playing around on my motorcycle. I have a Harley. Free your mind, go for a ride—especially on John’s Island. It’s just a nice ride.”
