Perfect pair: When I pop up at Palmetto Brewing, I like to drink their Nice & Brite gose, because it pairs perfectly with my adobo.Cheese, please: At home, I love to cook simple things for my wife. She loves when I make pasta, ragu—anything with a lot of cheese.Hidden talents: I grew up playing basketball (it’s big in the Philippines). I’m one of those small guys who can do cool tricks with the ball.Pop-up pals: I love the thit rang from Little Miss Ha (at Workshop). The caramelized meat is sweet and salty.Fall guy: We don’t really have too many season changes in the Philippines. I love when the leaves start to turn different colors here.
