2 oz. Casamigos tequila blanco
1/4 oz. St. Germain
1/2 oz. Aperol
1/2 oz. lime juice
1/2 oz. habanero-infused simple syrup, recipe follows
Lime wedge, for garnish
Combine spirits, lime juice, and simple syrup in a shaker with ice and shake. Pour all ingredients into a stemless coupe or a rocks glass. Top with a splash of club soda and garnish with a lime wedge.
For the simple syrup: Heat one and a half cups water with one and a half cups sugar until the sugar is dissolved. Remove from heat. Add one diced habanero pepper (without seeds) and let sit for 24 hours. Remove peppers before use. Store in an airtight container in the refrigerator for up to two weeks.
