1 lb. bulk sausage, hot or mild
8 slices white bread, torn into bite-size pieces
2 cups grated cheddar cheese
1 cup grated Swiss cheese
2 cups milk
Salt and pepper, to taste
Hot sauce, to taste (optional)
Cook sausage in a large skillet over medium-high heat until evenly browned. Drain fat and set aside. In a large bowl, combine sausage with bread and cheeses, then transfer to lightly greased 9- x 13-inch casserole dish.
In a separate bowl, beat the eggs and milk together, season with salt, pepper, and hot sauce and pour over bread mixture. Cover and refrigerate for several hours or overnight.
Preheat oven to 350°F. Uncover the casserole and bake for 50 to 60 minutes, or until a knife inserted into the center comes out clean.
