Cava Avinyó Brut Reserva Rosado Catalonia, Spain
“This dry Spanish sparkler is made in the champenoise method using 100 percent pinot noir. In the glass, it smells of red cherries and strawberries and has a dry finish. It’s absolutely sublime paired with steak tartare.” Available at Whole Foods, $17

Ruinart Blanc de Blancs Champagne, France
“When only the best will do, reach for this. All chardonnay with flavors of citrus, tropical fruit, and white flowers, this pour happens to be made by one of the oldest producers in Champagne. For true decadence, pair it with Peninsula Grill’s pan-roasted sea scallops, which are prepared in a citrus lobster broth.” Available at Bottles, $65

Laurent-Perrier Brut Champagne, France
“Some celebrations call for a true Champagne, like this medium-bodied pick with apple and pear aromas. It’s a delicious wine to pair with many holiday dishes, such as sautéed Carolina hen.” Available at The Wine Shop of Charleston, $47
