3 large heirloom tomatoes, sliced
1 bunch fresh basil, stems removed, leaves whole
1 lb. fresh mozzarella (recipe follows), sliced into ¼-inch slices
High-quality sea salt and fresh ground black pepper, to taste
3 Tbs. high-quality extra virgin olive oil
1 Tbs. aged balsamic vinegar


Layer tomato, basil leaves, and mozzarella slices on serving platter. Sprinkle with sea salt and black pepper. Drizzle with olive oil and balsamic vinegar.
