Grill A Boston Butt
❶ Buy a four- to six-pound Boston butt.
❷ To add flavor, brine in a salt and water mixture or soak the butt in apple juice overnight.
❸ Remove from liquid and pat dry.
❹ Before grilling, let the butt sit for 30 minutes at room temperature.
❺ Off-set direct heat by building coals around the meat, or if using a gas grill, set only one side of the grill to 220-235°F and place meat on other side.
❻ Cook butt fat side up for six hours, flipping the meat every half hour.
❼ When done, allow meat to rest for 10 minutes before cutting.
❽ Serve it with mac and cheese or collards.
