Food + Drink: Fit to Be Tyler
Greenville native and Johnson & Wales grad TYLER FLORENCE—a chef célèbre with four Food Network shows, two cookbooks, and a new restaurant set to open in 2006—chats about his Lowcountry roots and how he made it to the big leagues
Tyler Florence is teaching a woman to fry chicken. The woman, whose name is Diana, says her breading “won’t stick.” Says she takes grief from her church group about her cooking. Standing by with a bowl of flour, Florence prompts Diana through a regimen of flavoring agents designed to punch up the breading’s impact—onion and garlic powders, paprika, black pepper. She adds them cautiously, hesitantly. He motions for more. “Don’t be afraid of flavor,” he says. At Florence’s urging, Diana dips brined, floured chicken parts into buttermilk, then back into seasoned flour. “Know how much this manicure cost?” she asks, adding, “Look, now the flour’s getting all in my bracelet.”
“I hate it when that happens,” Florence says. “It’s Tiffany,” Diana remarks, to which Florence replies, “That may be a Tiffany bracelet, but this is gonna be a Gucci fried chicken.”
You’re watching Food 911, Tyler Florence’s no-nonsense, to-the-rescue Food Network series. The segment is on Soul Food. The woman, who’s learning to cook it, is black. If the construct seems skewed, no one seems to care—certainly not Tyler Florence.
A South Carolina native and rising media star, Tyler Florence (the subtly insistent double trochée in his name, TY-ler FLOR-ence, suggests the Southern patrician), has plenty of cause for confidence. Employed by the Food Network full-time since 1999, Florence has, to his credit, 300 episodes of Food 911; 36 episodes of a globetrotting series called Tyler’s Ultimate; and four seasons hosting the show How to Boil Water. His next Food Network series (details on ice pending a formal launch) is in pre-production. He has written two cookbooks, Tyler Florence’s Real Kitchen and Eat This Book, and is poised to close a deal on a restaurant in lower Manhattan. He is 34 years old.
And why shouldn’t he do Soul Food? Florence grew up in Greenville, South Carolina, in a culture he describes as “suburban skateboard.” But his culinary yearnings went on past the asphalt and into the rural South—to his maternal grandmother’s kitchen garden near High Point, North Carolina (a region known for laying splendid tables), for instance, or to his paternal grandfather’s smokehouse near Lincolnton, Georgia. “Going to see my grandparents,” he says, “was like going back 50 years. Every weekend was a history lesson in Southern food.”
In high school, Florence began working at the Fishmarket, a French restaurant in Greenville (and by his account “the hottest place in town”), where he got hooked on the hustle and flow of restaurant work at the pot sink. “I fell in love with the craft of cooking,” he says, “which had nothing to do with Southern food.” In 1989, he came to Charleston to attend Johnson & Wales University, graduating in 1991. (Last year, Johnson & Wales in Providence awarded him an honorary doctorate, an event Florence characterizes as a high point in his career.)
It was after culinary school that he first experienced Southern regional cuisine in concept and execution, doing a year of kitchen time each under Donald Barickman at Magnolias and Louis Osteen, then of Louis’ Charleston Grill—two chefs with two very different takes on the same foodways. Florence describes Osteen as a classicist who looked to the past for sources of inspiration and gripped tradition hard. A fried green tomato would be served with a spray of sea salt—nothing more. Barickman, on the other hand, was inclined to throw Southern ingredients in a jar, shake them, and see what came out. Both chefs, Florence contends, influenced the way he cooks today.
Florence made an impression on his mentors as well. Barickman remembers him in 1991 as “an energetic powerhouse of a line cook who went at it from every direction. It was pretty obvious he was going somewhere quick,” he says. In fact, Florence got loose from Charleston at age 22 (fresh out of Johnson & Wales) on an assist by Louis Osteen, who made a call to Charlie Palmer at Aureole in Manhattan, landing Florence his first cooking job in the big city. “Tyler was always packing up to leave for New York,” Osteen says. “He was always after something bigger, something better, something new.”
Florence sprinted through a handful of notable Manhattan kitchens in the early ’90s—including Aureole on the Upper East Side and the River Café in Brooklyn—before securing, at 25, a job as executive chef at a midtown restaurant called Cibo. He recalls his early years in New York as a period of difficult adjustment—it’s an impression his resumé does not reflect.
While at Cibo, Florence scored television appearances for the fledgling Food Network—the PR company hired by the restaurant also represented the media people. He describes his initial on-camera experience as “four and a half minutes of stutter and sweat.” At the end of the day, however, all he wanted was more. By 1999, four and a half minutes had expanded into 18 (plus four commercial breaks), and Florence was doing 30-minute Food 911 shows—full time.
In his books and on television, Florence strives to bring forward the notion that “brilliant, simple cooking” is not insurmountably difficult. Fledgling home cooks, he believes, must commit to buying a decent set of pots and pans and a decent set of knives (three will do) as well as to practice cooking a couple of nights a week, when there’s no pressure. Don’t venture into uncharted recipes for a dinner party or begin with recipes that run on for days, he says.
What does Florence bring to the camera? His fan sites are legion. Katie Couric has called him the “sexiest man to ever pick up a chef’s knife.” On Food 911, women guests barely get beyond the state of mute rapture and dropped jaws. (It could, of course, be the food—when Florence feeds women guests from a spoon, their eyes roll heavenwards.) And it doesn’t hurt that he is boyishly good-looking, generally flexing a fair amount of forearm, and custom-fitted for the Food Network demographic: female, 25 to 38 years old, two kids, remodeled kitchen.
On Food 911, Florence comes off as a hip neighborhood guy who teaches weekly guests to cook (premise: they’re having a problem preparing something—chili, pie dough, ice cream—and need help). “I’m here in Greenwich, Connecticut, making ice cream with my buddy, Liz.” Fired-up and energetic, but always in control, Florence treats his guests as equals. He doesn’t get all segment-rushed and frantic like a lot of TV chefs, and he keeps his message clear, uncomplicated, and free from technical chefspeak. “I’m going to toast these chilies in a pan to wake up the sleeping flavors,” he might say. It’s when Florence throws to the commercial break that the undercurrent of energy he’s sublimated throughout the segment becomes palpable. He’ll do a side-trigger street move—swung shoulder, hand pointing into the camera—and say, “Be right back.” What he’s really saying is “Bring it on.”
Ultimately, Florence’s appeal lies somewhere in the mix between his cool, uncluttered TV shtick and the energy of a commercial kitchen he carries in his presence. You know he could slam out a couple of hundred covers and not even blink. But, at this instant, he’s cooking with you, and promising mac and cheese that’s “absolutely off the hook.”
Ask Florence to account for the stunning velocity with which he stacked up four television series with Food Network (Nielson number one rated for host recognition), wrote a couple of cookbooks, closed a restaurant deal, and launched a new Braun immersion blender, and he’ll tell you it’s by “being himself” every day. It sounds like a non-answer—practiced and reductive. Yet knocking around his Lower East Side loft in Manhattan or pacing through Chinatown or Little Italy after ingredients, the real-life Tyler Florence (who admits time management is his biggest challenge) does not seem terribly different in person from the Tyler Florence on TV. He moves and speaks like a New Yorker—focused, driven, and perpetually late for a meeting. The confidence we experience on television is clearly an extension of who he is as a man.
At home, cooking shrimp and polenta with pancetta and herbs (a dish he calls Grits and the City) for lunch, Florence moves easily through prep, assembly, and execution, maintaining the easy banter he does on TV. He’s wearing G-Star Raw jeans and a pair of old-school Adidas. He’s got thin-sliced pancetta sizzling in a skillet with wreaths of herbs and crushed garlic.
Florence considers himself a Southern chef: “I cut my teeth on Southern food. Growing up with good food, having traveled the world and eaten a ton of it, I’d have to say American cuisine doesn’t get any more authentic than it does in the South. It’s rootsy,” he continues, “it’s delicious, it’s crisp, it’s savory, it’s brown; it’s well-balanced; it’s black pepper, vinegar, and sugar; ham and smoke; all these deep, rich flavors. Those things affect how I cook today.”
Florence’s Boston terrier, Jake (middle name Bacon)—who keeps vigil for scraps but moves nimbly out of Florence’s footpath like any good chef dog—scores a curl of crisp pancetta.
Charleston, Florence contends, defines American regional cuisine more demonstrably than anywhere else. “Its roots are old, African—garlic, okra, collard greens, rice—everything that simmers together slowly in a pot. My cooking style now,” he continues, using a fresh linen cloth to mop a spill on the stove as if it were a grimy side towel and streaming corn meal from his hand into a bowl, “is all about drawing the deepest flavor out of an ingredient.”
Tyler Florence’s next big move, what he calls “an anchor on the definition of what I am as a chef,” will be his new restaurant. Occupying nearly a full corner block on Kenmare Street in lower Manhattan on the fringe of Little Italy, the restaurant will be appointed in the style of an contemporary farmhouse and serve rustic Italian food. Its name: Bar Florence.
Authentic cooking styles the world over, Florence notes, share similar sensibilities. “The cooking of Tuscany,” he says, “is very similar to cooking in the South—simple ingredients, braised for a long time, soft and mushy and rich.” Just as the simple, elevated dish he’s prepared for lunch shares sensibilities with the Lowcountry classic, shrimp and grits. The characters’ names, of course, have been changed—bacon to pancetta, cheddar to parmesan, butter to olive oil, grits to polenta—but they’re basically brothers. And satisfying on the same primordial level.
So what, after all these years, is Florence’s favorite Southern dish, the dish he craves and makes at home more than anything else? Fried chicken, he says, without hesitation.
That’s Gucci fried chicken to you.
- 2 Tbs. olive oil
- 2 12-oz. chicken legs, bone-in
- 6 large cloves garlic, crushed
- 2 large sprigs thyme
- 2 large sprigs rosemary
- Salt and freshly ground black pepper
- 1 rib celery, diced
- 1 medium carrot, diced
- 1 medium yellow onion, diced
- 2 (32-oz.) cartons organic low-sodium chicken broth
- 1 bay leaf
- 2 cups fine white polenta
- 1/2 cup heavy cream
- 2 Tbs. extra virgin olive oil
- 1/4 cup finely grated aged Parmigiano-Reggiano
- 2 lbs. large fresh shrimp
- Juice of one lemon, plus additional wedges to season shrimp
- Salt and freshly ground black pepper
- Sprig or two thyme and rosemary, bruised
- 1 Tbs. olive oil
- 3 oz. pancetta, cut in thin slices
- 2 cloves garlic, crushed
- 2 sprigs rosemary
- 2 Tbs. flour
- 2 Tbs. unsalted butter, cool room temperature
- 2 Tbs. chopped Italian parsley
For the Stock:
Heat olive oil in large, heavy saucepan. Brown chicken well with garlic, thyme, and rosemary, about three minutes per side. Sprinkle with salt and pepper. Toss in diced vegetables and brown lightly, stirring once or twice, five to seven minutes. Pour prepared broth into pot, scraping bottom with wooden spoon to deglaze, add bay leaf, and bring to a simmer over high heat. Reduce heat to low and simmer 45 minutes to one hour. Pass stock through a fine strainer into large, clean saucepan. Set one of six cups total stock aside to finish sauce and bring remaining stock to a simmer.
While stock is cooking, peel and devein shrimp. Toss shrimp with lemon juice, salt, pepper, and herbs. Set aside. Meanwhile, heat oil in large skillet and cook pancetta until crisp and fat has rendered, about 10 minutes, adding garlic and herbs halfway through. Transfer pancetta and aromatics to plate in warm oven, leaving rendered fat in skillet. Remove skillet from heat—do not discard fat.
For the polenta:
Turn polenta into mixing bowl and whisk to a smooth slurry with two cups hot broth from saucepan. Return slurry to simmering stock, whisking vigorously. As soon as polenta bubbles around edges, whisk in cream, reduce heat to low, and cook, stirring occasionally, until polenta thickens to porridge consistency, about 10 minutes. Stir in olive oil. Set aside and keep warm.
Heat reserved pancetta fat in skillet over high heat. Add shrimp in single layer, and sear without turning, two minutes. Turn and sear second side, two minutes. Sprinkle flour over shrimp, turn shrimp, and sprinkle with lemon juice. Pour reserved broth into skillet, scraping with wooden spoon to deglaze. Bring to simmer and add butter, stirring to emulsify butter and thicken sauce. Remove skillet from heat, taste for seasoning, and sprinkle with parsley.
Spoon polenta into four shallow bowls. Sprinkle one tablespoon grated cheese over each. Arrange five shrimp per plate onto polenta and top with sauce. Garnish with reserved pancetta and herbs.
